Here is another delicious recipe from Isabelle Dupuis of Microbrasserie le Presbytère : a chicken and maitake mushroom burger, enhanced with a double touch of truffle, thanks to our duo of Appalachian truffle oil & mayonnaise.
Serves: 4 people Total preparation time: 35 minutes
INGREDIENTS
- Brioche hamburger bun
- Two chicken breasts
- Maitake mushrooms (or oyster mushrooms, for a more delicate taste)
- Eight slices of smoked bacon - pre-cooked
- Tomato(s)
- Lettuce of your choice
- Appalachian truffle mayonnaise
- Appalachian truffle oil
INSTRUCTIONS
- Preheat a frying pan with a little olive oil. Slice your chicken breasts in half lengthwise; you will then have four chicken slices, ready to grill in the pan. Season with salt and pepper.
- When the chicken is cooked and golden brown on both sides, remove it from the pan and keep it warm to make room for the mushrooms. Grill them for a few minutes in olive oil or butter (over medium heat). Towards the end, add a drizzle of Les Truffettes truffle oil, then remove from the heat when cooked to your liking.
- Use the same pan to warm and brown your burger buns.
- Assembly: Top your buns with a generous layer of Appalachian truffle-flavored mayonnaise, add the grilled chicken, mushrooms, one or two slices of fresh tomato, lettuce and bacon, then close.
- Serve with a salad and fries on the side... and why not add a final drizzle of Appalachian truffle oil?
