Here is a simple and quick recipe, suggested by Heidi Small of Beyond the Plate.
INGREDIENTS
- Cooked chicken (preferably breast)
- Celery stalks
- Fresh dill
- Pickles
- Lettuce of your choice (romaine suggested)
- 1 to 2 tablespoons of Appalachian truffle mayonnaise
- Salt and pepper
INSTRUCTIONS
- Cut your cooked chicken into small pieces and put in a salad bowl.
- Finely chop the dill and gherkins. Dice the celery to your preferred size to add texture to your salad. Add to the salad bowl.
- Add the mayonnaise, along with salt and pepper to taste. Mix well.
You can enjoy this salad as is, or serve it in a delicious sandwich.
