Nothing in the fridge to make dinner? Here's our favorite "I don't have time" recipe to look like a champion even on a Monday night. LOL!
INGREDIENTS
- 375g of pasta of your choice (penne, spaghetti, fusilli, etc.)
- 1 tablespoon butter
- 1 finely chopped onion
- 1 clove of garlic, finely chopped
- 1 can (796ml) of diced tomatoes
- ¼ tsp baking soda
- 2 tbsp. Appalachian truffle flavored oil
- To garnish, grated Parmesan or any hard cheese
- Salt and freshly ground black pepper, to taste
INSTRUCTIONS
- In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
- Meanwhile, in another large skillet, heat the butter and cook the garlic and onion over medium heat. Gently fry for about 1 to 2 minutes, until the onion is translucent.
- Add the diced tomatoes and bring to a boil.
- Add the baking soda and stir constantly with a wooden spoon until the foam created has completely disappeared.
- Simmer gently for about 8 minutes, stirring occasionally, until the sauce thickens slightly.
- Once the pasta is cooked, drain well.
- Add the pasta to the tomato sauce and mix gently to coat well.
- Stir in the Appalachian truffle flavored oil, cheese and season to taste.
- Stir again to distribute the seasonings evenly and serve.
This quick pasta with Appalachian truffle flavor is delicious served on its own or with a crisp green salad.
