Tomato tart is the "must" of August. The abundance in the garden and in the markets allows us to savor tomatoes as if we were in Italy! It's time to put this delicious red fruit everywhere, everywhere and the tomato tart is a classic to rediscover with the Appalachian truffle flavored oil .
INGREDIENTS
- 1 sheet of puff pastry or shortcrust pastry (homemade or store-bought)
- 4-5 or more ripe tomatoes, thinly sliced
- 1 cup grated cheese (Gruyere, Mozzarella, or whatever you like)
- 2 tbsp Dijon mustard soup
- Salt and pepper
- Herbs of Provence or fresh basil

INSTRUCTIONS
- Preheat oven** to 375°F
- Spread the dough in a pie dish and prick the bottom with a fork.
- Brush the bottom of the tart with Dijon mustard.
- Spread the grated cheese evenly over the bottom of the tart.
- Arrange the tomato slices on the cheese, overlapping them slightly.
- Season** with salt, pepper and herbs of your choice.
- Bake for 30-35 minutes, or until the tart is golden brown and the tomatoes are cooked through.
- Let cool for a few minutes.
- Drizzle the tomatoes generously with the Appalachian truffle-flavored oil.
