INGREDIENTS
- 1 egg yolk
- 1 tsp Dijon mustard
- 1 tbsp lemon juice or vinegar
- 1 cup sunflower oil or olive oil
- 1 tbsp. Appalachian truffle oil

INSTRUCTIONS
- In a food processor, mix the egg yolk with the Dijon mustard for 15 seconds.
- While continuously operating the robot, gradually add the sunflower or olive oil in a thin stream until the mayonnaise thickens.
- Once the mayonnaise has a creamy consistency, add the Appalachian truffle flavored oil by activating the robot.
- Finish by adding lemon juice or vinegar and activate the robot one last time.
- Season with salt and pepper to taste.
- Keep the mayonnaise in the refrigerator until use.
