INGREDIENTS
Lobster meat mixture
- 1 lb cooked lobster meat, cut into large pieces
- 3 tbsp Appalachian truffle-flavored mayonnaise from Les Truffettes
- 2 tbsp celery, finely diced
- 1 tbsp fresh dill, chopped
- 1 tsp fresh tarragon, chopped
- 1 tsp samphire mustard (or Dijon mustard)
- 1 tsp lemon juice
- 1 pinch ground star anise
- 1 tsp harissa
- 2 tbsp sun-dried tomatoes, cut into strips
For serving
- Melted butter
- 4 hot dog buns
- 8 Boston lettuce leaves
- Salt, to taste.
INSTRUCTIONS
· Cooking the lobster
Cook the lobster in at least 1.5 liters of salted water for 10 minutes (once the water returns to a boil) for a 1lb lobster. Once cooked, immediately plunge the lobster into an ice bath to stop the cooking and preserve the texture of the meat. Shell and set aside the meat.
· Preparing the mixture
In a bowl, gently mix the lobster meat with mayonnaise, celery, herbs, mustard, lemon juice, star anise pepper, harissa, and sun-dried tomatoes. Adjust seasoning as needed. Keep chilled.
· Preparing the buns
Brush the buns with melted butter, then grill them in a pan or on the BBQ until golden and slightly crispy.
· Assembly
Garnish each bun with a Boston lettuce leaf, generously add the lobster mixture, then place a lobster claw as a garnish for an elegant presentation.
Serve immediately and enjoy. Bon appétit!
